GLENDALOUGH POT STILL IRISH WHISKEY

The man on our bottle, St Kevin, stood apart, and this whiskey does the same. A quintessentially Irish style of whiskey, pot still, it is first matured in an American oak, ex-bourbon cask. It is then further matured in an Irish oak cask made from trees felled in the Wicklow Mountains. While the bourbon cask softens and sweetens the whiskey, the higher levels of flavour in the Irish oak cask complements and balances the classic pot still spices.
Inspired by our home in the Wicklow mountains, we wanted to capture the flavour of where we are from in our whiskey. The Irish oaks surrounding our home represented the perfect opportunity to do so in a meaningful way.
Our Pot Still Irish Whiskey is finished in 250 litre hogshead, slow toasted Irish oak casks. These trees are harvested in the Wicklow mountains under a Continuous Cover Forest Management System in which we plant 7 saplings for every oak felled.
This whiskey makes available the flavours of Irish oak to everyone. The Irish oak complements and balances the classic pot still spices with notes of cinnamon & nutmeg.
Nose: Sweet and citrus with vanilla, caramel, banana, treacle, with earthy, herbal undertones of oak spices and leather.
Taste: Chewy, warm and buttery, pot still malt and spices, toffeed pears, treacle, cinnamon, nutmeg and distinctive toasted, tannic oak.
Finish: Long with creamy vanilla, almond, forest fruit and toasted Irish oak.

About Glendalough
Glendalough is a valley nestled deep in the Wicklow mountains. An area known for its scenic beauty. Just south of Dublin, County Wicklow is renowned for its bountiful fields, rolling mountains and deep forests. It is affectionately known as “the Garden of Ireland”, and we’re fortunate enough to call these lands our home.
Glendalough is also home to a 6th century settlement founded by St Kevin, the man on our bottle, who turned his back on a life of wealth and privilege in search of something more meaningful. After years of exploring the Irish wilderness Kevin came across the majestic valley he would come to call home. He went on to dedicate his life to nature and taking the path less travelled.
St. Kevin One day he arrived at the deep, isolated valley of Glendalough. He stood with his arms outstretched, marveling at its beauty. A blackbird landed on his hand and laid her eggs. He took it as a sign, a test of his resolve. So, there he stood, steadfast, day and night until the eggs hatched and the birds fledged. This story, and many others about Kevin, drew people from all over Ireland to the valley.
Over time this beautiful valley nestled in the Wicklow mountains of Ireland formed the historical and culturally rich valley that is Glendalough today.
Geraldine Kavanagh, our Head Forager, grew up in Wicklow and has spent many a year wandering these living lands searching for the best flavours Glendalough has to offer which we encapsulate in a bottle. This gave her an innate knowledge and a great love of plants and nature.
Soft of hand and light of foot, Geraldine never takes too much from any one area, always treading lightly and with care. She is a fountain of knowledge and an absolute expert in her field.
Ciaran “Rowdy” Rooney - Head Distiller
Rowdy has worked his way up the Glendalough ranks after offering to help when Glendalough Distillery was only starting up. He fell for the distilling process and after getting his qualifications he became Glendalough’s head distiller. Alongside Geraldine they developed the recipe for Glendalough’s Wild Botanical Gin among other small batch Glendalough Gin releases. Distilling and whiskey maturation are now Rowdy’s total passions of which he is a specialist.
He developed the Glendalough Wild Rose gin recipe in honour of his late Mother, Rose, for his brother’s wedding. Initially a small batch experiment, this beautiful gesture by Rowdy was so good we now produce it commercially so everyone can raise a glass to Rose.
Sam Mulligan - Distiller
Sam is the newest member of the Glendalough Distillery production team and has honed his craft over the years under the guidance of Rowdy.
Every day within hours of foraging, Geraldine’s harvest is brought to Sam in the distillery. He uses small batch slow distillation to gently tease out the delicate flavours of the botanicals. Some are destined for the pot, others hung high in a basket, their essential oils extracted by the rising vapours never timed or automated each batch is equal parts alchemy and artistry, Sam ensures the spirit of the land is distilled and represented in each bottle.
